Sensei Anthony Castillo has been deployed to Virginia where he will serve his country as a member of the United States Army.  Anthony and his family are from Hawaii  and have lived in Colorado for seven years.  Anthony taught Judo at the DBT Judo Dojo in Denver and competed in Judo and Jiu-Jitsu Tournaments nationally.   His daughter Leila has just been accepted  to Kake University in Okayama, Japan, and hopefully, will begin her  studies this fall. Good luck to the Castillo family in the next chapter of your lives!

Below is information about DBT Judo Dojo when it is safe to practice again.

      • Judo is an Olympic sport from Japan which is good for recreation, physical fitness, competition, and self-defense.
      • Who: males and females, ages six and older can join DBT Judo.
      • Where: Denver Buddhist Temple Gym, 1947 Lawrence Street, Denver, CO. 80202.
      • Enter the gym from the catwalk on the second floor of the parking garage on Larimer Street. Parking is validated for Judo practice.
      • Cost: $30/Month. Add just $10 for each additional member from the same household.
      • Note: It is absolutely not necessary to be either a member of the Temple or Buddhist to be a part of DBT Judo; everyone is welcome regardless of race, color, religion (creed), gender, gender expression, age (6 and up), national origin (ancestry), disability, marital status, sexual orientation and military status.

Recipe for the month:  Shiso Vegetable Dip

What is Shiso? Shiso, 紫蘇, シソPerilla frutescens var. crispa is not only fun to say but judging by the way that it is used in cooking, it is a pretty fun herb to eat, too.  As a part of the Perilla family, it is a close cousin of the ubiquitous herb, mint, so you can only imagine what sort of kick shiso has.  Green shiso is a bit spicy in flavor with a hint of cinnamon. The leaves are rich in calcium and iron, and because of its strong flavor, can stand up to such things as pickling. Shiso is used in traditional  medicine as well, believed to help prevent anemia and contain cancer-fighting properties. Some Japanese use it alongside ginger, rice vinegar, or umeboshi to help blood circulation.

        • Dark Sesame oil……………Tbsp 1 *
        • Recipe:  Shiso Leaves……. 20-30 leaves
        • Japanese Miso paste…….  Tbsp 2-3 *
        • Roasted Sesame seeds…..Tbsp 1 *
        • Sugar……….Tbsp ½ *
        • Milin……….Tbsp 2 *
    • In a small pot, put all * ingredients, when started to boil, stir in Chopped up (small) Shiso leaves cook about 10 seconds.Great with fresh vegetable slices!   All ingredients are available at Pacific Mercantile 1925 Lawrence St. Denver.  Free parking with purchase.
